I really like fresh avocados with just some lemon and salt. mmm. I could eat that every day. I know it's not what you are looking for, but I just had to add to the avocado tree envy Tongue

I just made like an avocado-corn-tomato relish and served it with grilled flank steak and it was really good...gonna try it again with some shrimp.  Just throw together some corn (I used canned, drained it first), diced avocado squirted with a little lemon juice, diced red onion (or green onion), chopped tomato, some cider vinegar and a little sugar.  Let sit to mix the flavors and serve chilled with grilled meats or seafood(or, on a cracker, like I had yesterday after work)

I LOVE avocado! Grin
I haven't made anything special with it,  i usually just eat it as it is with a squeeze of lemon  Tongue yum
It's also good with shrimp-mayonnaise-thingy..

you (or your mom) is soooo lucky to have an avocado tree!

I'll be nicer if you give me chocolate.

Mm, I might not be too helpful, but here are my recipes for avocado salad.

1. Take an avocado, a ripe tomato, some chilli (I use bottled) and a red onion. Dice the avocado and tomato, slice the onion and chop the chilli. Mix everything and add some dressing. For the dressing, mix lemon juice, olive oil, vinegar, salt, pepper and spices (I use basil, oregano and also chilli opwder). That's all.

2. Take an avocado, a tangerine (or orange), some kind of salad, parsley and tomato (hope I'm not forgetting anything). Slice, dice or whatever and add the dressing (mix mustard, olive oil (if you want it - not actually necessary), vinegar, salt, pepper).

Guacamole guacamole guacamoleeeeeeee. I make pretty fucking awesome guacamole, or so I hear. It's really simple too, just squish up a couple avocados and add salsa, lime juice and salt. I sometimes eat it with chips as a whole meal.

Shaina, I love guac too.  I make it with avo, chopped onion, garlic seasoned salt, chilli powder and a dash of tobasco.  Not entirely traditional, but very tasty.  Also, you're avatar is brilliant.

I'm loving everyones ideas.  Mum pointed out to me that I should have posted when the tree actually had fruit on it so we don't sit here craving avocado when we have none.  Woops.  So, I've been going out and buy avos.  Hehe.

There is a restaurant by my house called Tao, and I got hooked on their 'cado sammiches...
Do you mean Tao Foods on 22nd and Hennepin in Mpls? I LOOOOVE their avocado sandwich. I have them add cheese and it is decadently delicious.

There's a Venezuelan place I used to go to in New York that serves this sort of sandwich that's in a corn flatbread (I think it's called an arepa) and is filled with chicken salad made with mashed avocado instead of mayonaise. It's amazing. I have tried to recreate it at home, and basically came up with this:
cook some chicken (this is a great way to use leftover roast chicken)
shred it
cut up some avocadoes and mash them up with some minced onions, garlic, jalapeno
mix in some chopped cilantro
add salt and pepper to taste
squeeze a bunch of lemon or lime juice into it
fold in the shredded chicken

I don't know where you'd find arepas, but you could use cornbread or even corn tortillas, I suppose.
