My hub's fav sweets is oatmeal cookies..so I made them for his bday on friday because he'd rather the cookies than a cake

kitchen sink oatmeal cookies

3 cups [quick cooking] oats
3/4 cup sugar or sugar substitute
1 cup butter [ i used vegetable spread ]
2 eggs or equivalent
yellow cake mix [ 1 cup needed ]
1 tsp vanilla
2 tsp cinnamon
2 tsp pumpkin pie spice [ or allspice ]

mix butter & sugar until fluffy. .. Add in the vanilla and spices. Mix in the rest of the dry ingredients + oats. Let stand for 20 min. Bake at 350 degrees for 10-12 minutes. Do not overbake.

am i the only one who watches these daytime cooking shows like home matters?..have u ever heard of the cake doctor?  Cake mixes are a starter for some GREAT cakes if modified with the right ingredients!!!

The cake doctor is a great recipe book [ i rented it at the library.. ] ideas for making luscious stuff such as kahlua cakes to every kind of cookie [ made from cake mixes !! ]

cake mixes have all the essentials for lazy cooks! .. no need to add stuff like baking soda + baking powder..all essentials are already in the mix...
