I found this gnome http://www.seasonsoriginals.biz/knit-baby-gnome.html that uses bits of yarn and is uber cute.
For craft faires- knitting little pouches would be a good idea because you could fill them with ANYTHING.

Knit early for Christmas!
Haven't tried these, but they look like a good way to use up small bits of yarn

BABY SOCKS!  they are soooo awesome and if you don't have a baby, they make awesome gifts.  they are easy and quick.  I just wish I had a crapload of scrap sock yarn laying around!  my baby has quite the sock collection already, i just can't get enough of them.

i've developed quite the stash of leftovers  of fingering yarn, and i've decided that i am going to make crazy insane not-even-close-to-matching socks out of them... Grin

betzi, what pattern do you use for your socks? I greatly desire to knit socks for my baby- she needs more striped socks.  Wink

I just discovered an online magazine the other day which has a pattern for a capelet made from yarn leftovers. Check it out here...
