We are celebrating our amazing boss today with a potluck. To me there’s no better way to celebrate than with CUPCAKES! This cookie dough icing has been calling my name so I decided to give it a go. It was worth it! I’m happy there is quite a bit leftover so I can eat it with a spoon. And yes, it’s totally okay to eat this raw since there’s no eggs in the recipe!!

You are going to need:
Cupcakes or a cake, I used a box mix cause I was in a hurry.
1 ½ cups brown sugar
1 cup softened butter
1 ½ cups flour
2 tsp vanilla
½-1 cup milk (I used ½ cup but for a more spreadable consistency use more)
1 cup mini chocolate chips
 
Start by creaming  the butter and sugar
Add the vanilla
Add the flour ½ cup at a time, mixing between each addition
Start adding the milk, I added a little at a time until it reached a consistency I liked
Mix in the chips
 
Now you can grab a spoon and get to eating or I suppose you can then scoop on to cupcakes as I did or spread it on a cake.

I made this once and had to stop myself from eating it all!  It is definitely scrumptious!
This would also be good as a dip with grahams or pretzels
