I have been itching to bake something but I also wanted it to be super easy and not take up a ton of time. I decided to make a Depression Cake. The story behind the cake is that it was popular during the 1930's because the ingredients were cheap and there are no eggs or butter. I'm guessing it was popular in the 1940's during WWII when they had rations. Anyhoo...  here is the cake and it is delicious with or without frosting.

Ingredients:
1 1/2 Cups flour (all-purpose)
3 Tbsp. cocoa (unsweetened)
1 Cup sugar (All purpose sugar Granulated Pure Cane Sugar)
1 tsp. baking soda
1/2 tsp.  salt
1 tsp. apple cider vinegar (you can use white vinegar too)
1 tsp.  pure vanilla extract
5 Tbsp. vegetable oil
1 Cup water

Preheat oven to 350
Mix dry ingredients together
Make 3 small holes in the dry ingredients
In each hole add the vinegar (first hole), the oil (second hole) and water (third hole)
Mix together
Pour into a floured baking pan
Bake for 20-35 minutes. (My oven is really hot and it only took 20 minutes. Insert a toothpick and if it comes out clean, it's done)

Cool! What a fun idea to make this cake! After reading the recipe, I'm curious about how different vinegars might effect the flavor in subtle ways. We have like a dozen vinegars, because... The ManFlesh.  Roll Eyes

BTW, have you read American Cake?   I took it out of the library on my kindle, since so much of it was about the history of the cakes, rather than just straight recipes.  I couldn't put it down.
