Shortcake for strawberries, blueberries, or various fruits is very simple. The only thing that might be difficult is getting a Flan Pan. But, if you don't have one, just use a round or square Pan.

3 Large Eggs
3/4 C. Sugar
3/4 C. Flour

Preheat oven to 350*F
Grease and flour Flan Pan - Really well.
Put 1 pint (2 C.) berries into a bowl, sprinkle with 1/4-1/2 C. Sugar. Let stand while you mix and bake cake.

Beat eggs. Add sugar. Beat. Add flour. Beat.
Pour into prepared pan. Bake 15-20 minutes, until cake springs back when lightly touched, and lightly browned. Cool on a rack. Then turn onto a plate. Lightly stir berries, and fill middle part of cake. Slice and serve with Whipped cream. Enjoy.
