This has been my go-to side dish recipe all summer.  It’s so good!  Za’atar is a middle eastern spice blend.  If you can’t find it at your grocery store, you can make your own.



Za’atar Dressing
Juice of 1 lemon
1/4 cup olive oil
1 T. Za’atar spice blend (recipe below)
1/2 tsp salt
1/4 tsp pepper

Preheat oven to 375.  In a baking dish add:
1 can chickpeas (drained)
3 carrots peeled and chopped
1/4 cup pickled jalapeño slices
Half of the za’atar dressing
Bake for 25 minutes

While that is baking, stir 1 cup of Israeli couscous in a Tbsp of olive oil over medium heat for approx 5 minutes until toasted.  Stir frequently.  Add 1 1/4 cup chicken stock, cover and simmer for 10 min.  Remove from heat and let sit for 10 min.

Combine couscous, vegetables and remaining dressing.  It’s good both warm and chilled. 

Za’atar Spice Mixture
1T oregano
1T cumin
1T ground coriander
1T sesame seeds
1T sumac (if you can find it)
1 tsp salt
