Hello all!

A friend of mine just finished her masters (while working full time with a kid in daycare/a kid in elementary/a kid beginning college).  I'm exhausted just thinking about it.  I'm so proud of her!  I made her a congratulations cake that is a wink and a nod toward a joke we shared about geode cakes (specifically the ones that look more like a lady's....business).  What better way to celebrate her new business degree than a "business" cake that's 100% innocent and work appropriate?  Grin 

It's a six inch yellow cake with ruby chocolate filling (thank you Trader Joe's for affordable ruby chocolate!) and crumb coat.  I just made a basic American buttercream (2 parts powdered sugar to one part butter with a splash of vanilla) and added a whole bag of melted ruby chocolate chips so that it was a pretty, soft pink with a light berry taste.  I used a basic vanilla swiss meringue buttercream for the outside frosting.  The outer coat could be smoother, but I was pressed for time.  No worries here.  I don't have a pic of the inside, though.  I didn't stick around for the cutting of the cake but hope she saves me a piece!

I learned that with geode cakes, more and bigger is definitely better when it comes to the sugar crystals.  If there's a next time, I'll be careful to not crush the crystals and to use at least twice as many (with clear gel  or corn syrup holding it on rather than relying on the frosting).  The edible gold leaf was a nice surprise, though.  Super easy and looks great in person.  I'll use it again for sure. 

It's a looooot of frosting, so I hope her coworkers are sugar fiends.

I've never seen or heard of a geode cake until now, but, that's a fun edible spin on the real-world crystal formations.

I only thought of an open bloody wound when I first saw your photo, not female genitalia, but, now that you mentioned it, I can't un-see it . . .
