Spiced Rum & Strawberry Crumble Coffee Cake

Ingredients
Cake:

1/3 cup unsalted butter room temperature
1/2 cup granulated sugar
1 large egg
1 cup all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup sour cream, room temperature (or vegan sour cream thinned with coconut milk)
1 1/2 teaspoons pure vanilla extract
1 teaspoon rum extract
1 1/2 cups strawberries sliced

Crumble Topping:
3/8 cups all-purpose flour
3/8 cups quick-cooking oats
1/4 cup brown sugar
1/4 teaspoon salt
1/2 teaspoon baking spice, or cinnamon and a dash of allspice and cloves
1/4 cup unsalted butter melted then cooled


Directions
Preheat your oven to 350 degrees, and lightly spray 8x8 sized pan with non-stick baking spray.

Beat the butter and sugar on high speed for 4-5 minutes until light and fluffy.  Add in egg and continue to mix until combined.

Reduce the mixer speed to low and slowly add in flour, salt, baking powder, and baking soda until just combined.  Then pour in sour cream, vanilla extract, and rum extract, and mix until it just comes together without over beating.

Spread the cake batter evenly in pan and top with sliced strawberries.

For the crumble topping, stir together flour, brown sugar, salt, and baking spice blend (or cinnamon).

Drizzle the melted butter over flour mixture and using a fork, stir together until crumbs form.  Sprinkle crumbs over strawberries.

Bake the cake for 30-45 minutes OR until a toothpick inserted into the center of the cake comes out clean.  (If you're having trouble telling if the cake is done, jiggle the pan.  If the center wobbles, it's not done!)

Allow cake to cool, then serve, preferably with a great cup of tea.  Or coffee if you must.  Wink
