On a recent trip to the grocery store I saw these little pre-packaged personal flapjack mixes

Since Ive been hooked on the Kodiak mix to make all kinds of things I have the Costco sized package in my pantry I decided to try to make my own.

I used 1/2 cup mix and 1/3 cup of water. You want all the mix to be wet but not watery. For some flavor I mixed in some Everything but the Bagel seasoning from Trader Joes and microwaved it for 1 minute. I found that if you let it sit for a few minutes prior to microwaving it fluffs up really nicely.

It was delish!!!

You can never be mad at pancakes. The best part is that it is all for you!

I dialed in the measurements a bit more. This morning I used 1/2 cup mix and 1/3 cup water.
