I have been craving cheesecake lately but really not in the mood to go through the whole production of making one. So, this was an easy and somewhat low cal alternative. No baking and minimal prep!

This recipe will make roughly 3-4 if put into a small mason jar. The calories, if you follow the recipe I used are around 140 per serving. The nice thing is you can freeze it or keep it in the fridge and have a little dessert whenever you want.

Ingredients:
1 1/2 cups no fat Greek yogurt
1 pack of sugar free cheesecake flavor jello (if you want a different flavor cheese cake, you can use chocolate or lemon or whatever you choose)
1 cup fat free or lite cool whip (there is only about a 5 calorie difference in the lite and the regular so really, it doesn't matter if you want to use regular)
crushed chocolate graham crackers (I used 8 graham crackers to crush for the bottom)
strawberries

Crush graham crackers and line the bottom of the mason jar
Mix the Greek yogurt, jello and the cool whip together until it is smooth. It will be super thick so don't stress about the consistency. Just make sure the jello is all mixed in.
Layer the cheesecake mix on top of the graham crackers, then add a layer of strawberries and another layer of cheesecake and one more layer of strawberries
Place a lid on top of the jar and put in the fridge for 2 hours.
After 2 hours take out and enjoy!

I think I might try key lime or lemon next.
