In honor of a sweet friend's birthday, here's a pastel checkerboard cake.  I baked the three cakes (pink, blue, and purple) separately, then used the "dartboard" separator that comes with the Wilton checkerboard pans to cut the baked cakes and arrange the circular pieces in the pattern.  It's kind of like using an apple corer.


If you prefer, you can ladle/pour the colored batter into the rings before you bake and then lift out the separator, but I think that's finicky and messy--and the rings will be squiggly and uneven.  Using frosting between the layers kept the cut pieces together very well.

I think it would be nice for Easter.  Smiley
