Juicing lately and not happy with all that precious leftover pulp that gets composted.
This time, after juicing carrots,  I decided to eat it!

Had 12 cups of pulp to work with. There were occasional  large bits of carrots mixed in and I removed them.
Sauted 5 chopped shallots and 3 cloves of pressed garlic.
Added them to pulp, put in a beaten egg, half cup of veggie broth, three quarter of a cup chickpea flour.
Mixed well, let sit for 10 minutes.
Pressed into patties, fried on medium heat in avacado oil, 5 minutes per side in a cast iron skillet.
Here in this picture I am using vegan Chipotle mayo as a spread. Tons of other options...anything you might think for a condiment that tops a burger.

Texture was a new experience for me, definitely pulpy! Carrot flavor just barely came through.

Now I have about a dozen cheap healthy meals.  It made 18 patties.

There are the Redcoats. And they are ours! Or tonight Becky Thatcher sleeps a widow!
