I have been trying to eat better, New Year and all that and am loving the Kodiak Cakes mix I found at Costco. Its a great healthy alternative to regular old pancake mix and you can do a ton of stuff with it. I decided to try making muffins. These have no sugar (other than the dark chocolate I mixed in but you can omit that) and tons of protein! I altered the original recipe a bit but will share both.


I used
2 cups Kodiak mix
1 tsp baking powder
1 Tbsp PBFit powder
1 egg
1 cup milk
1 tsp vanilla extract
2 mashed bananas
1/4 cup melted coconut oil
1/2 bar of dark chocolate chopped (optional)

Mix the dry ingredients together add the wet ingredients and mix. Fill prepped muffin tins 3/4 full and bake at 350 for 15-18 minutes



Here is the original recipe and I have seen a ton of recipes that use almond milk instead of regular milk
2 cups Kodiak mix

1 tsp cinnamon
1 egg
1 cup milk
1 tsp vanilla extract
2 mashed bananas
1/4 cup melted coconut oil
Blueberries (optional)
