Need to bring something to an office holiday party you forgot about?  Or perhaps you just remembered you wanted to do something for your neighbor, yoga teacher, mail carrier, etc. this year?  How about something homemade!  This is not your average cranberry bread, and is certainly not the sugar-bomb of a quick bread that I grew up with.  The addition of whole wheat flour and oatmeal, along with a lower sugar content make it a much more healthy option; while the spices, fresh orange peel, tart cranberries and hint of Bourbon give it all the flavors of the holiday season.  I made 2 double batches, resulting in 4  hearty loaves, so feel free to double or triple it, or to bake it in numerous smaller loaves (decreasing the baking time accordingly).


Bourbon Spiked Cranberry Orange & Oatmeal Bread

Ingredients:
1 cup all-purpose flour
1 cup whole-wheat flour
1-1/4 cups oats (quick or old fashioned, uncooked)
1/2 cup brown sugar
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1/4 tsp nutmeg
1/2 tsp cinnamon
1/4 tsp allspice
1 cup non-fat milk
3 eggs, lightly beaten
1/4 cup orange juice
1 Tbsp grated orange peel (I used 1 large naval orange for both peel & juice)
2 Tbsp Bourbon
1/4 cup vegetable oil
1 1/2 - 2 cups chopped fresh cranberries
turbinado sugar for sprinkling (optional)



Directions:
Heat oven to 350F. Spray pan bottom & 1" up the sides of a 9" x 5" loaf pan with non-stick spray.

Wash your orange, using a vegetable brush to get up the dirt and wax on the outside, then use a zester to remove the zest.  Slice in half and juice, straining out the pulp and any seeds.  Set aside.

In a large bowl, combine all-purpose flour, whole wheat flour, oats, brown sugar, baking powder, baking soda, salt, nutmeg, cinnamon, and allspice.  Mix well.  Stir in the chopped cranberries, so they get an even coating of the flour mixture.  This will ensure they don't all sink to the bottom.

In a medium bowl, combine milk, eggs, orange juice, oil and orange peel; whisk well.  Add the wet mix to the dry ingredients all at once, and stir just until just combined. Don't over mix.

Pour batter into pan. Sprinkle lightly with turbinado sugar on top if desired.  (I used a clove sugar I had on hand for added flavor & color.)  Bake 60 to 70 minutes or until wooden toothpick inserted in center comes out clean. Cool in pan on wire rack 10 minutes.

Remove from pan. Cool completely. Wrap in wax paper & yarn, and give to your friends and neighbors this Christmas.

Thanks friends!  It is pretty good, if I do say so myself.  It's dense and hearty, but not stodgy.  The fresh cranberries & oj really brighten it all up.
