Hello there!  A good friend of mine has a birthday tomorrow, and today we're celebrating her with lunch and cupcakes.  In honor of her love of pumpkin spice lattes from Starbucks, I made her these cupcakes.  They were also a good excuse to use pipettes - which I've been wanting to do for a while. Smiley  (recipes included below)

I baked the cupcakes in 4 oz white paper cups that mimic Starbucks cups in their shape.  Easy to find on Amazon.  I ran out of time to make brown paper sleeves with "Basic Birthday" or something in the middle...oh well.

The cupcake is pumpkin with lots of spices and espresso powder.  The frosting is vanilla ermine, which has a texture similar to thickly whipped cream.  The squeezy thing is an extra shot of pumpkin spice syrup.  Smiley  You can find the pipettes easily on Amazon as well -- mine are 4 ml sized.

They were a hit!

Cupcakes (makes 12 - 350 degrees to bake)

   1⅓ cups all-purpose flour
   4 teaspoons espresso powder
   1 teaspoon baking powder
   1 teaspoon baking soda
    teaspoon salt
    teaspoon ground cinnamon
   Pinch of ground nutmeg
   Pinch of ground cloves
    cup canned pumpkin
    cup granulated sugar
    cup dark brown sugar
    cup vegetable oil
   2 eggs

Whisk all together - no need to use a mixer.

5 tbs flour
1 cup milk
1 cup butter, softened
1 cup granulated sugar
1 tsp vanilla
pinch salt

Cook flour and milk, whisking constantly in saucepan till very thick (like playdough).  Cool completely.  Use mixer to whisk butter and sugar and salt until very fluffy and light (will take several minutes--I'd say about 5-8).  Gradually add flour mixture and vanilla and whisk.  Should be like whipped cream and have no graininess.

Syrup (I made half and still had a ton left over.)
   1 1/2 cup Water
   1 1/2 cup Sugar
   1/3 cup Pumpkin Puree
   1 1/2 tsp Cinnamon
   1 tsp Nutmeg
   1/2 tsp Cloves
   1/2 tsp Ginger

Boil all together until sugar is dissolved.  Cool before using.

Outside of a dog, a book is man's best friend.  Inside of a dog, it's too dark to read.

Oh, my goodness!  I seriously thought those were a fancy coffee-type drink from the thumbnail.  Those look great!
