We attended a dinner party last night that was potluck-if-you-feel-like-it, so I made these cardamom-zucchini cupcakes with lime frosting. Because of the zucchini, eating one has got to contribute to the daily recommended servings of vegetables, right? Right!



I used this recipe and they were a big hit! The recipe makes one dozen stardard style cupcakes, but because I didn't know how many would be attending, if there would be other dessert options, or how all attendees felt about these flavors, I made mini cupcakes. I got 48 minis + 2 regular cupcakes out of it.

Yes! So moist! The lime frosting is really good. Enough citrus acidity to cut the cream cheese and butter a bit.

Ooh, yummy! Did you use real buttermilk or did you fake it? I have so much frozen grated zucc from this year's garden & we're back to school now so the giant batch cooking & baking is on again. The kids seem to like muffins more than loaves for some reason. & though I like to use butter for lots of things I do appreciate a good recipe with oil instead. The Joy of Cooking has the best oil based biscuits, So. Easy.

I used real buttermilk. I actually found it in a half-pint which I had never seen before, so that was nice. And luckily, The ManFlesh made a recipe requiring the rest of it over the weekend!
