I am so late to the trend of smoothie bowls. You guys! Seriously! They are SOOO good! I made one over the weekend from the fresh fruit we got at the farmer's market. We had some at a food cart a few weeks ago and they were super expensive. I decided to try to make my own.


This serves 1-2 people

Smoothie
1 cup coconut milk (you can use almond milk or water)
1/4 cup of greek nonfat yougurt
1/2 cup frozen fruit
1/2 cup spinach
1 1/2 teaspoon acai powder

Put it all in a blender and mix it up.

For toppings
1 tablespoon hemp hearts
sprinkle of granola
sprinkle of goji berries
cacao nibs
handful of fresh fruit (1/2 cup maybe)
drizzle of honey


Blend your smoothie and it into a bowl. If you have time, put it in the freezer for 10-15 minutes to have it set up a little bit.I didn't do this and the end of my smoothie bowl was more liquid then smoothie. Add the toppings you like. I used hemp hearts, granola, dried goji berries, cacao nibs and fresh fruit. I drizzled the top with meadow foam honey.

This is definitely a filling breakfast/snack. My energy levels were pretty high. Be careful of gogi berries. They can interfere with blood pressure and diabetes meds. They also can keep you up at night.

I've been making these for breakfast every morning! I buy frozen acai puree. You can find it at Trader Joe's, Sprouts, or Costco. If you add a banana it helps to make it a bit thicker and creamier. I add bee pollen on mine too!
