I made these last night for dinner. It is SO simple and quick! You can use other meats and veggies if you want. This could feed 2-4 people. There was two of us and we had leftovers.

Ingredients:
3-4 peeled and cut potatoes
1 zuchinni
1/4 cup chopped onion
1/2 smoked sausage-kielbasa  (we used turkey)
1 ear of corn chopped into 4 pieces
1/2 yellow or red pepper
2.5 tablespoons olive oil
1/2 tablespoon oregano
1 to 2 tablespoons Old Bay Seasoning

Preheat grill to 350

In a bowl mix the oil and seasonings together.
Throw in all the veggies and meats into the bowl and coat them with the oil mixture.




Take two large pieces of tin foil and criss cross them.


Add the mixture to the middle of the tin foil.


Roll up the tin foil to create a pouch


Throw on the grill for 20 minutes

Open up and eat!


If you don't have a grill you can cook in the stove for 20-25 minutes at 400

Looks tasty and colorful--it's amazing the stuff that you can cook on a grill rolled up in aluminum foil!  I think the only things I've ever tried to do in that fashion were potatoes and corn on the cob (individually, not mixed with other items).  I mostly use the microwave, 'cuz I'm both lazy and impatient.  Tongue

I did it! Totally inspired by you Smiley. I can post pics right now & it was only foil packets of sliced potatoes & green beans to go with last night's dinner of bbq chicken but it was delish!
