It was my Hubby’s birthday on the 15th. I was feeling badly, since I was low on ingredients, and didn’t have enough to make a cake for his birthday. Then, my sis-in-law suggested a mayonnaise cake. I decided to look it up online, and found one. (And I had all the ingredients!)
Rather than provide a link, I’ll write it out.

Grease and flour pans: 2X9” Round, or 1 9X13 Oblong
Preheat oven to 350*F
Read entire recipe. Gather utensils & ingredients.

Mix in a medium bowl:
2 C. Flour
2/3 C. Cocoa Powder
1 1/4 tsp. B. Soda
1/4 tsp. B. Powder

In a large bowl, beat on high for 3 Minutes:
1 2/3 C. Sugar
3 whole Eggs
1 tsp. Vanilla
Add and beat on Low Speed until blended:
1 C. Mayonnaise

Now: to the large bowl, add dry ingredients alternately with:
1 C. Water
Start and end with Dry Ingredients.

Pour batter into prepared pans.
Bake in preheated oven:
2X9” round — 30 minutes
9X13 Oblong — 35-40 minutes.
Until a toothpick comes out clean.

Cool on rack, put onto cake plate, frost, enjoy.

Well done!  I keep meaning to try making tomato soup cake.  I love those old strange recipes for making due with what you have.  Have you read American Cake?  It's a great book, and includes all kinds of cakes like this.

Well done!  I keep meaning to try making tomato soup cake.  I love those old strange recipes for making due with what you have.  Have you read American Cake?  It's a great book, and includes all kinds of cakes like this. 

I haven’t seen the book. I have previously thought of trying this kind of a cake — just because when I think Mayonaisse in a cake, my mind rebels and thinks, “UGH!!!” But this turned out yummy.

Definitely give (at least this one) a try.

I am not a fan of mayo and can't wrap my mind around it being used in cake but I bet it makes it super moist! Great job and I can't wait to see your tomato soup cake Mistress Jennie!

Banana Mayo bread?  Roll Eyes I’ve not heard of that one, but it sounds like it could be good.
