My husband and I were in a rut about what to cook for dinner so I did a little shout out to friends for ideas. One suggested calzone.  I was a little stressed about making them but they are SO easy. The best part is that each person can make their own so no worries about not liking the meal. This is a simple recipe for the crust and a basic "stuffing".



Calzone Crust (this is a basic pizza crust, so if you don't want calzone, make a pizza)

Ingredients:
1-3/4 to 2-1/4 cups all flour
1 packet of pizza dough yeast
1-1/2 teaspoons sugar
3/4 teaspoon salt
2/3 cup hot water
3 tablespoons oil

Start with 1 cup of flour and add the other dry ingredients. Mix and then add the oil and water. The dough will be very sticky. Add more flour until the dough no longer sticks to your fingers. Usually 2 cups is enough. You do not need to wait for the dough to rise when you use the pizza crust dough. Just mix and you are ready.

Ingredients for the stuffing
1 cup pizza sauce (approximately)
mozzarella cheese
Italian seasonings
veggies or meats you want

Cut the dough into 4 equal parts and roll out the dough to a flat roundish shape.
On one side of the dough, spread the pizza sauce, the cheese and any toppings you want. Add more cheese on top and sprinkle the seasonings.
Fold the side without all the stuffings over to make a pocket.
Crimp the dough ( I did a little fold over with the crimping-like a pie crust)
Spread a little olive oil with garlic powder or Italian seasonings to the top of the calzone.

Bake at 425 for 10-15 minutes (until top and bottom are golden brown)

Enjoy!

When I first made this, I made two huge calzones. It was way too much food for just my husband and I. The next time I made them, I broke it down to 4 and froze the other 2 so I could make them for lunch or a quick dinner.

I can not believe how easy this was and I'm excited about trying different ingredients like summer veggies. I think I might even make some dessert ones when strawberries and raspberries come into season.

OOPS! That is suppose to say pizza dough yeast. I just fixed it. Pizza dough yeast in the baking section with the flour.

It's a super fast acting yeast so you don't have to wait for the dough to rise. If you can't find pizza yeast, fast acting will work just as well. I think you might have to wait 30 minutes instead of instant use.
