Banana bread is something I often make in large batches and freeze so the kids have a somewhat healthy treat to take to school in their lunches. I don't claim to be great at baking but I thought the recipe I was using was ok until a friend came over with a loaf she'd baked. "Best banana bread ever!" my children proclaimed  Undecided Cry.

She emailed her recipe and it has MAYO in it, wha...?! Eww, right? Wrong. Best Banana Bread EVAR. I made a batch of muffins last night, came down this morning to find:

Makes 12 regular sized muffins, 9 large muffins, or 2 small loaves
Preheat oven to 350F

1C Miracle Whip (I used Hellman's mayo)
1C sugar (I used a bit less)
1C mashed banana
2C all purpose flour
1tsp vanilla
1tsp baking soda
1tsp baking powder

Mix first 3 ingredients and add vanilla.
Sift dry ingredients together and add to first mixture. (I stir until there are no flour lumps but do not overwork the batter)
Pour into greased muffin tins and bake for 20 mins. (I used muffin papers and had to bake for additional time, test with a toothpick inserted into the middle of a muffin).

I often have a few frozen bananas in the freezer so I am going to try this asap! Thanks for posting Smiley

The best chocolate cake I ever ate was so moist and delicious and also made with Miracle Whip (which has more sugar but less fat than mayo)...so, I imagine those muffins are also moist and delicious!

I, too, have frozen bananas that need to be used up!  Yummy!

I've never heard of using mayonnaise in baking breads/cakes until reading this thread; I'll have to give that a try sometime!
