Save your fork, there's pie!

Store bought butter crust brushed with milk & blind baked. More than the called for spicy flavours of cinnamon & ginger. I tried a recipe w heavy cream last time so these have both that & milk which was heated up, the eggs were warmed in the shell in a bowl of hot water then beaten & added to the warm milk. The pumpkin was heated with the spices & sugars until bubbling & fragrant, then a added & beaten in a spoonful at a time to the warm milk & egg (this keeps the heat from cooking the eggs). Warm filling is added to warm crust & put directly into a 375 oven. I used foil to cover the crust edge for half the baking time, I didn't want it to get burned at all.
One of these has xylitol in place of sugar for my auntie. You can't tell which at all, I had to mark the tin.



It was so delicious, spicy & rich. Yum!
