Even though it's still quite warm here in the South, on Monday afternoon I was craving a warm bowl of soup.  Since I make my meal plans for the week over the weekend, and the plan I'd created didn't include soup on Monday, I dug around the cupboards to see what I could come up with.  The result?  Corn & Potato Chowder!  And since I'm lactose intolerant, mine was made dairy-free (and much lower in fat and calories) by using cashew milk instead of whole milk or heavy cream.


Corn & Potato Chowder
1 vidalia onion
4-5 Yukon gold potatoes
4 ears of fresh corn (or 1 bag of frozen sweet corn)
1 32-ounce box of vegetable broth
2 cups of milk, divided (cashew milk, almond milk, soy milk, or even dairy milk)
1/3 cup flour
olive oil
salt & pepper
smoked paprika
fresh chopped parsley
fresh chopped chives
shredded cheddar or faux cheese of choice (optional)
veggie 'bacon' bits, or crumbled real bacon if you have a Midwestern farm boy for a husband (optional)

Chop the onion to a small dice, and the potatoes to a medium dice.  If using fresh corn, cut the kernels off the cob.  If using frozen corn, thaw the frozen kernels in the microwave, with a few tablespoons of water, stirring often for even thawing.  (They don't need to be piping hot, but they do need to be not frozen.)

Heat a soup pot over medium heat, and add 1 Tablespoon of olive oil to the pan.  Once hot, saut the onions until they are just beginning to brown.  Add in the potatoes and vegetable broth.  Bring to a boil.

Once boiling, reduce heat to a simmer, and cook 10-15 minutes, until the potatoes are tender when pierced with a fork.

Add in the fresh or thawed & drained corn kernels.  Mix 1 cup milk with 1/3 cup flour, and stir to combine, making sure to work out any lumps.  Pour the milk & flour mixture into the pot and stir to combine.  If the soup is too chunky, add more milk until your desired level of broth is achieved.  Season with salt & pepper.  Return to a low boil, and cook 1-2 minutes, until the corn is cooked through.

Pour the soup into bowls, and garnish with smoked paprika, chopped fresh parsley & chives, shredded cheese, and veggie bacon bits.  Extra delicious when served with crusty bread or crescent rolls to sop up the broth.
