Black Tea Jelly

One of my favorite things about Craftster is the inspiration from other members.  Abbeeroad recently challenged all of us in the Harry Potter Craftalong to cook with tea this month as part of her Iron Chef Hogwarts series.  As soon as she announced the secret ingredient, I knew exactly what I wanted to make.  Black Tea Jelly.  The recipe comes from Pomona's Pectin, which is a special pectin that allows you to use very low amounts of sugar, or various sugar substitutes like honey, agave, maple syrup, or splenda.  (Most regular pectins require a recipe to be 55-85% sugar in order to gel!)  This allows the flavors of the fruit or other liquid used to shine through, and this recipe was no exception.  The flavor is a bold black tea, with a hint of lemon.  It's also a great pectin to use if you or someone you love is diabetic, or needs to watch their sugar intake for any reason.  I like how simple this recipe is, the fact that it uses so few ingredients (which are probably already in your cupboard), and can be made year round, rather than when something is in-season.

The pectin is made in Canada, so I'm pretty sure you'll be able to find it.  Wink  And the lemon juice used in the recipe certainly can be tasted, so I'm not sure you'd need to use a specifically lemon-flavored tea.  Cheesy

I just found it at several local stores - thanks!  As for the lemon - I grew up on lemon black tea, which is why I LOVE the idea of this jelly.  I just saw the ginger/lemon cold comfort one on the site too - score!  So excited - thanks!

My auntie would love a jar of this for the holidays, she is a big tea drinker and also off sugar (using xylitol). I'll give this a go and see how it turns out. How fun!
