Feeding 5 people, including a large man and a teenaged boy, is challenging at best. I cook giant batches of things to try to keep up with all the hungry mouths, lol.
Here's tonight's effort:
Apple crumble with raisins, cherries, berries, or pineapple.

It freezes very well, I just increase the baking time from 45 mins at 350 to 30 mins with a foil tent & 30 mins uncovered.

Here's some bread, wheat in various flavours & corn. Sliced thin or the kids eat it like texas toast & it's gone in no time!

We love bacon but it's so fatty it causes a few of us tummy upset. Better to cook a couple pounds of it to sprinkle into things instead. You still get all the flavour. & yes, that is a large mason jar of strained bacon fat. One of two, for frying stuff, lol.

Vats of tomato meat sauce (bison) and a rice & tri-colour quinoa mix. Both of them freeze well for later use in soup, stews & casseroles.

Black eyed peas, these freeze well for the above.

There's a chest freezer in the basement, I freeze batches flat in the fridge freezer to make them easier to line up in the big freezer. It's like filed food, ha ha!

Mare, most everything can be frozen in smaller portions. It would be a good idea to date & label it all carefully so nothing gets lost for years at the bottom/back of the freezer, lol. I don't label anything, my family is like a hoard of locusts!

Tonight we prepped so much food for the week. Come Thurs-Fri though I know I'll be desperately searching the fridge for something to make for dinner. I don't know how my great grandmothers did this with 15 & 17 kids in the house!
2 loaves of cornbread, a large pot of potato leek soup, washed and chopped peppers, fennel, broccoli, zucchini, kale, spinach, salad mix, cooked and smashed sweet potatoes and turnip, caramelized 10lbs of onions, sauteed peppers and onions, made a 1/2 litre mason jar of salad dressing.


There's already pasta sauce thawing from a previous big batch, the freezers are loaded with portions of pesto, lemon grass paste, cooked chickpeas, black eyed peas, and white navy beans, sautéed ground meat blend for casserole etc, and all that fruit crumble from the other day. Tomorrow we'll cook and crumble up a couple pounds of bacon, make a few loaves of wheat bread and maybe some shortbread cookie dough to freeze. I would really like to load up the freezer with pie crusts for pumpkin pie and quiche but my mil is coming for a visit and maybe she might not love being put to work at industrial cooking while she's here, lol.

Oh, and crackers. I am determined to make some of those this week. They are way way too costy to purchase pre-made at the rate my hoard devours crunchy snacks, ha ha!

I'm using some of that huge batch of caramelized onions tonight to spruce up some mushrooms.



It's a lot of mushrooms, maybe 2 lbs. Some for dinner tonight, the rest will go in the freezer to have pieces chopped off when we're making steak, chicken, etc. It's so good, oh boy...

I sure did! As much of a recipe as I use that is. It's one you can add more or less of every ingredient to taste so there is a list of ingredients but not measurements.

I just made a gourmet side dish in less than 5 minutes total with frozen big batch items.
Previously sautéed and frozen leeks, celery, caramelized onions with mushrooms, pesto, and bacon thawed in a pot with a splash of broth:

Throw in some spinach, salt, pepper, and a bit of green sriracha sauce, just wilt the spinach and stir it all up:


It is seriously delicious and it would have taken hours to prepare from scratch.

Last week's effort:
2 large pots of soup. Over night crock pot chicken bone broth with veggies and rice, roast beef stew with left over gravy and sweet potatoes.

I froze the beef stew in 2 portions for future meals we need to have quick.


HAAA, my finger's in the pictures! LOL.
Filled the deep freezer up with 20 fruit crumbles.


Banana bread, carrot loaf, wheat bread:


Whew, I'm tired. Oh, and I also browned some packages of ground bison, froze half for cottage pie or tomato sauce this week or next.

I've been pretty happy with this recipe! After the baking soda dunk I spread melted butter on top, kosher salt, and sometimes do granulated garlic and/or sesame seeds and I've also done my own homemade "everything bagel" seasoning which is just garlic flakes, onion flakes, black and white sesame seeds, sea salt, poppy seeds. And if I do that I also add some sunflower seeds, yum! And sometimes I do another coat of melted butter when they come out of the oven too lol! And I bake on parchment paper, I had a brain fart and used foil last time and it stuck a bit.

I love all these recipes, they look great! I like the idea of cooking up and freezing ingredients yourself, especially the caramelised onions and the sautéd leeks.

We were away and when we got back I pulled a few things out of the freezer:
-pre-cooked black eyed peas went into a squash soup.
-a fruit crumble.
-chicken drumsticks and thighs barbequed last night.
-precooked chickpeas to make chana masala tomorrow night.
-precooked white navy beans will make a dip for veggies and corn chips.
-roast beef and veggie stew for lunch today.
-sauteed onions and mushrooms and some pesto to tart up tonight's dinner. That'll be it for the frozen onions so we bought another 10lb bag and will saute at least half of them up to freeze.
-pasta sauce, enough for a pasta meal and then as a base for soup for the weekend.

It is so handy having all that prepared frozen stuff, sure keeps me having to heat up the house with hours of cooking right now.

The weather has finally broken so I can cook and bake without making the house unbearably hot. In fact, this is great weather for baking because now we want to warm up!

Dinner got made around apple/fruit crumble using an entire bushel of apples.


Each crumble is apple based with either raisins, mango, cherries or blueberries.
