Ground meat and bacon being universally acceptable foods by my large family, I thought I'd try this bacon wrapped meatloaf recipe. My own adjustments to the ingredients of course, and cooked in the oven not on a grill, it being December.

Cooked on a sheet of baking parchment atop a small upside down cookie sheet on top of a larger right side up cookie sheet so the fat would drain away but there wasn't much fat at all in the end.


It was really delicious. We used bison, oats instead of bread crumbs for a gluten-free version, and I didn't include the cheese in the original recipe this time but I might next time. This dish is a keeper.

Thanks! The oven roasted veggies are my quick go-to side dish.
I just took some ground bison out of the freezer to make this recipe again. I'll add the cheese this time to try it out. It really is delish, my family is still talking about it from the other day, ha!
