This salad has few ingredients and doesn't look super interesting but I've just made it again tonight for the thousandth time and I'm telling you, it is IMPRESSIVE in deliciousness. I take this to potlucks and parties and serve it at home, it is really tasty.



ingredients:
Raw fennel, sliced very thin
pear, sliced very thin (less pear for less sweet, more pear for more sweet)
dressing:
lime juice
dill (fresh is best but dried is fine)
ground black pepper (again, fresh cracked is best)
salt to taste
Mix dressing ingredients and toss with the fennel and pear.
Keeps well in the fridge for 2-4 days.

Thanks, I made it up! This summer we were shopping for a potluck and I wanted to make a crisp, refreshing salad. I don't know what caused me think of this combo but I'm so glad I did. It was a hit.
I've tried it with a more complex dressing but that only seems to detract from the flavour. Simple is best. It is ok with lemon instead of the lime, or even fresh orange juice with a touch of vinegar for the missing tartness.
