I was in the mood for something home baked and autumn inspired today.  Meanwhile, over in the HP Craftalong our fearless Kitchen Elf, Abbeeroad issued us all the challenge of cooking with beer.  Add to that the fact that there has been a Sam Adams Toasted Caramel Bock in our fridge for nearly 2 months, that neither DH nor I, will drink, and what do you have?  Pumpkin Beer Bread!  Yeah that's right.  Beer bread, with pumpkin.  Or Pumpkin Bread, with beer.  However you look at it, it's tasty.  DH & I especially enjoyed it grilled.  Smiley



Pumpkin Beer Bread
3 cups flour (I used 2 c AP flour, and 1 c whole wheat flour)
1 Tbsp. baking powder
2 tsp. pumpkin pie spice (I used cinnamon, ginger & nutmeg)
1 tsp. salt
4 Tbsp. brown sugar
1 cup pumpkin puree
1 12-ounce bottle of beer (I used Sam Adams Toasted Caramel Bock)

Preheat oven to 375 degrees. Grease a 9x5-inch bread pan with cooking spray, or line with parchment paper.

Stir flour, baking powder, salt, spices, brown sugar and pumpkin puree together in a large mixing bowl until combined.

Slowly add in the beer, and stir until combined and smooth.

Bake for 50-60 minutes, or until a toothpick inserted in the middle of the bread comes out clean. Let bread rest for at least 5 minutes before slicing.

Woohoo!! It looks delicious and perfect for this time of year. Glad you found a yummy use for that bock! There's nothing sadder than a lonely beer in the back of the fridge.... Grin
