    The past two days have been full of canning the two boxes of cucumber and tomato seconds I got at a local farmer's market.  After weighing, the totals were 31.8 pounds of tomatoes (though there were soft spots I had to cut out) and 24.9 pounds of cucumbers.  I have six cucumbers left (any ideas?), but every other bit was used in the following:

    Fiesta Salsa (7 pints) - used Ball Fiesta Salsa mix



Pickles - 6 quarts of bread and butter pickles, 6 quarts and 1 pint of dill pickles - used Mrs. Wage's mixes for both



Tomato sauce (7 pints) and Cucumber relish (12 half-pints) - Ball Complete Book of Home Preserving recipes for both



Things I learned:
  • you can fit more bread&butter pickles in the jars than you think
  • if using an All American Pro Pressure Canner, make sure you put enough olive oil on the rims so you can get the top off without use of a screw driver for leverage
  • a food mill is SO. MUCH. EASIER. to mush up tomatoes and remove the skins than removing the skins THEN mushing them up
  • it goes faster when you've a second pair of hands
  • I need more counter space and possibly a bigger pantry
  • canning is addictive ... now I want to do bbq sauce, blackberry jam, chicken broth ... Cheesy

Yummy! Canning is an awesome good time, it does go faster (and can be way more fun) with more hands Smiley.

For your left over cukes you could try quickles, fridge pickles, or fermented pickles. You've got to eat them up faster than vinegar canned but they never last long in my house anyhow.

I'm wanting a pressure canner, I'd like to be able to can without having to add acid. Ready to eat beans from dried is pretty appealing too.

When I decided to learn to can, I planned to make 7 recipes in various types, like salsas, jams, pickles, etc.  I ended up making 20 different recipes that summer, and have made countless more since then.  It is SO ADDICTIVE!

Everything looks amazing!! I've always wanted to try canning and makes salsas and such. I tried pickles once and it was a failure

Yum - haven't canned in awhile.  May have to do so again seeing this.  Definitely do fridge pickles - so yummy!

@Kaz814:  Just a total side note, love your avatar.  I made myself a powerpuff icon too, and our's are pretty near identical.  Only I have red hair, worn down.  But other than that, same outfit, same eyes, same complexion, same pup!  Smiley  

Edit: And just for fun, I just changed my Craftster profile to that icon.  I added the glasses and green background so we can each feel different.  Wink

We have yet to find a recipe that has our salsa turn out well.  It is always so bland, but we haven't used any seasoning packets yet.  How was it?
