We got some cheese curds in our CSA cheese share, and decided to fair-i-fy them by battering them and deep frying in oil. 





I found a random batter recipe online using ingredients we had in the house.  The batter was fine, but it didn't mix well with the cheese flavor.  If I try to make these again, I'll definitely go more breaded than batter for the coating.





Batter Recipe:
1 egg
1 TBSN vegetable oil
1 cup beer
1 cup flour
1 tspn sugar
1/8 tspn salt
1 tspn baking powder

Vegetable oil for frying heated to about 375 F.

Mix wet ingredients and dry ingredients separately.  Combine.  Drop cheese curds into batter and coat completely.  Drop into frying oil a few at a time.  Drain on paper towels.

As a native Wisconsite- I can attest to the fact that cheese curds are nature's most perfect food- especially when beer battered and deep fried. I am sorry your experiment with them didn't turn out.

The beer batter might have been better on a cheddar cheese. You might consider a tempura style batter next time. It's thinner and often uses rice flour or cornstarch which would make the shell crispier. Still looks delicious though!

Chipotle ranch with cheese curds sounds decadently delish!
