I have an autoimmune disease - don't know what specific disease it is, all the doctors and all the kings' men haven't been able to diagnose me. In the face of severe joint pain, I didn't know what to do. When the disease first came on 4 years ago, my husband did some online research, and found that people with arthritis generally had less joint pain when they eliminated wheat from their diet. So, I went gluten free... and I thought I was cured! The pain had pretty much gone. Fast forward to six months ago, my pain was coming back full force, maybe even worse than the first time. I was still gluten free, so it couldn't be that. In the face of the traditional doctor's uncertainty, I turned to functional medicine advice and books. They recommended not only eliminating wheat, but also corn, dairy, and soy. So I tried it. My pain is almost entirely gone again, but my diet is essentially a paleo diet (as I'm apparently sensitive to rice also). I was never much of a cook before this health mess, but I have been slowly metamorphizing into a cook out of flat-out necessity since there are so many things I can't eat - or rather, just a few things, but they are in EVERYTHING!

Anyway, long story short, my mother-in-law bought me almond flour, and I had to figure out what I could do with it. Tried paleo bread recipes (not that great, but a story for another time). But... on the back of the almond flour bag was a recipe for a vegan cookie. Don't remember the original recipe, but I modified it to what I had on hand and my tastes, and it came out BEAUTIFULLY! I swear, this is the first time any type of baked good has come out well for me (likely due to my penchant for modifying recipes). It is very unfortunate that I didn't take pictures, because not only did they taste good, but they were literally beautiful. (And, added bonus, they're super simple to make). (And also, I know this is both gluten-free and vegan, but it seems to fit under too many categories for me to decide where to actually post it.)

Without further ado, I give you my recipe for Paleo (and coincidentally vegan) Honey Walnut Cookies:
Ingredients:
  • 2 cups almond flour
  • tsp salt
  • tsp baking soda
  • cup oil (I used avocado oil, but I bet coconut oil would be amazing!)
  • cup honey (it works really well to use the same cup used previously for the oil, that way you get all the honey out of the cup - best for both cookie and cleaning purposes)
  • 1 cup walnut pieces (or half or whole walnuts smashed into smithereens)
Instructions:
  • Mix it all together, dry stuff first, then add the wet stuff.
  • Roll into balls (1in diameter balls will probably come out best)
  • Bake all them balls at 350 degrees F for 10 minutes
