Originally I wanted to find a recipe for Tomatillo Pie to use all the wee roundies in my garden. Then I decided to save them for grilling and use my abundance of green tomatoes.

I absolutely cannot do pie crust, so I purchase that and precooked them, pricking and baking for 12 minutes at 350.

Goop inside....
Peeled sliced green tomatoes, used about 10 medium ones and 15 small pear-shaped ones. Drained overnight because they were pretty darn juicy and I did not want mush at the bottom of the pie. I also mixed in a half cup of breadcrumbs to assist in keeping the juice thing tolerable. It worked.
Mix with a cup of grated swiss cheese, 20 fresh chopped basil leaves, a half cup of uncooked red onion, and a quarter cup of parm cheese. I used the last 2 or so tablespoons of the parm to sprinkle over the top.  All of the above ingredients made two pies.

baked at 475 for 30 minutes.

I am sooooo not a cook so as amazed and thrilled that this came out great, slices came out of the pie without falling apart, and it tastes wonderful!

There is nothing wrong with using purchased pie crust!  I think if it tasted good, that is good enough! Grin

Simple ingredients combined together to make a lovely meal or two!
