This is an easy and delicious dinner for during the week. Or whenever. Smiley


Spiralized veggies are a thing of beauty, and taste even better than they look.

Dish Ingredients:
2 large carrots, spiralized or julienne
1 small onion,  spiralized or julienne
1 English cucumber,  spiralized or julienne
Chicken breasts, grilled and shredded with fork
Sunflower seeds, optional

Dressing:
2 tsp. Lime juice
3T. soy sauce
1 T. Worschester
1 tsp. chili flakes
1 T. honey
1 clove minced garlic
1/2 tsp. Coriander
Add fresh mint, optional
Salt and pepper to taste



Directions:
Once all veggies are prepped place in large bowl and stir. In small bowl make dressing. Pour over veggies and stir well to coat. Plate veggies on individual plates, top with chicken. Add sunflower seeds if you like. Eat! Grin

Looks delicious and healthy!

What a fun way to add veggies to a meal!

The dressing is what makes this meal not your normal chicken and veggie one!  Thanks...it is easy enough for me to do on a week night!

Did you cook the zucchini? I found a pin that says to bake it at 200 for 30 minutes to get the moisture out prior to cooking them.
