In our house, "this tastes gluten free" is not a compliment.  After years of experimenting with different recipes, we've come up with this all purpose flour blend.  As the person in the house who can still eat gluten, this recipe has my seal of approval for tasting like regular flour.  Simply substitute it into your favourite recipes.  Occasionally I'll add an extra tablespoon or two of moisture to get the perfect consistency in some baking recipes.  Usually it's a straight substitute for regular flour. 

Equal parts:

Corn starch
Tapioca flour/starch
White rice flour
Sorghum flour
Quinoa flour

If you would like to make an adaptation of this blend, the first 4 ingredients are the staples of the recipe.

I can get my hands on the first 4 flours - but where do you get quinoa flour?

I'll give this a try. I have a very large bag of quinoa flour (from costco, I find bulk barn pricey). I don't know what to do with it, the taste is quite bitter. I haven't had much luck hiding it in baked goods, even just adding a little it seems to become the dominant flavour.
