No fry falafel. It's quick, easy, and perfect for when it is too hot to cook. So maybe it isn't really falafel, but a sandwich filling or salad. Whatever you want to call it, it is really tasty. Found the recipe years ago and make it all summer (because who really gets tired of chickpeas?)

2 cans chickpeas, drained and rinsed
3 stalks celery, diced
1 onion, diced
minced garlic, as much as you like
2-3 Tbsp mayo, salad dressing, vegenaise, whatever
2 Tbsp lemon juice
1-2 tsp dill
salt and pepper

Dump your chickpeas into a bowl and smoosh slightly with a fork. Or a pastry blender.
Add all other ingredients and mix well.
Done. After all of that hard work, you should go make yourself a nice drink.

Stuff it in pita with some greens, carrots, tomatoes for a sandwich or eat it with pita chips. Mine always has tzatziki and here is a simple recipe for that:

1 cup sour cream
1 Tbsp minced garlic
1 Tbsp finely chopped onion
chopped cucumber, as much as you like
salt and pepper
