This recipe is so yummy, it got me to eat eggplant! Takes all of about 20 minutes from start to eating. Smiley

Ingredients:
1 medium eggplant, sliced 1/2 inch thick pieces
2 T. olive oil
pasta of your choice
salt & pepper
2 teaspoons of red wine vinegar
6 cups of fresh, washed spinach
2 cloves garlic, minced
1 cup ricotta, low fat is fine
onion, sliced thin
sliced bella mushrooms, about 6
can diced tomatoes, or you can use fresh
crushed red pepper, to taste

Directions:
Heat oil in skillet. Add eggplant, salt, pepper. Cook till tender.  Put on cutting board and cut into bite size pieces. Cook pasta, and drain. Add eggplant spinach, vinegar, tomatoes, salt, pepper and red pepper to hot pasta and toss to combine. Serve immediately topped with ricotta.

I love eggplants. I haven't cooked them with spinach though. That's something to try. This looks delicious.

This looks so good. I love eggplant but never buy it cause hubby doesn't like it. This I can live with. I'll just need to tweak the spinach. Thank you for sharing this recipe!!!
