I first got this from a recipe book called "Company's Coming: Muffins and More"
At my first try of it, I discovered that making them one at a time is pointless. So, here's a double recipe.
Enjoy.

Grease & Flour 2 loaf pans. Preheat oven to 350*F

1 C. Butter
2 C. White Sugar
4 Eggs
1 C. Milk
In a large bowl, cream Butter and Sugar and 2 eggs. Beat in other 2 eggs. Blend in Milk.

3 C Flour
2 tsp. Baking Power
1 tsp. Salt
2 Grated Lemon rinds
In a 2nd bowl, thoroughly stir Flour, B. Power, Salt and Lemon rind. Add to milk mixture. Stir ONLY to MOISTEN! (do not over-stir) Spoon into prepared pans.
Bake 1 Hour, or until tests done with toothpick. Remove from oven, add Glaze. Cool in pans 10 minutes. Remove to rack and continue cooling. Wrap and store (I put it in the fridge, myself, but I don't think you have to.)

GLAZE
1/2 C. Sugar
Juice of 2 lemons
Combine juice and sugar in a small saucepan. Heat and stir to dissolve sugar. Spoon evenly over hot loafs.

Those remind me of some I've made from a Barefoot Contessa recipe, and they're truly delicious.  I agree, why make just one??  Thanks so much for sharing the recipe!

The Jean Pare Company's Coming books are great - often quite easy to make recipes that are generally quite delicious - the Muffins one was the first one I had - given to me as a gift from my sister when I was a young teen!  I learned to follow recipes from that book!  Thanks for the fond memories - I wonder if I still have it somewhere... if I remember correctly, there is a sour cream crescent recipe and a raisin tea biscuit recipe in there that were very yummy too!

Even though I received it over 20 years ago, I still haven't tried all of them. Like many cookbooks, I mark the ones I like, and leave the rest. I also have a "my best recipes" cookbook, with handwritten out recipes, for easier searching.

As I said, earlier, I received it as a wedding gift, over 20 years ago. This one, I tried about 10 years ago (?)
Dear Hubby, enjoys them so much, that baking them one at a time is quite pointless. That's why I listed a recipe for 2. In order to make only one, halve the recipe.

(I'm an absolute slave to recipes. If you hand me ingredients, and not a recipe for them, chances are good I'll just make a mess. {an inedible mess} 😑 )

Something else, I'd forgotten to add, if you like Coconut, you can add up to a Cup to this recipe.
I'm not a fan of Coconut, so I just leave it out.
