Wonderful entry (sorry to hear about your health problem; given that limitation, I imagine that the contest moderator(s) will be okay with your alternative approach)--I particularly like the colorful candy assortment on the roof of the structure.

I ran my own business selling cake decorating and candy making supplies and teaching cake decorating for many years. I also did a lot of baking as that was the second part of the business. I generally made over 250 gingerbread houses every year.
I will see what I can come up with for you that is gluten free. I know I can make it if I look at all the products out there for substitutions. Being considered a pro in this field I would be remiss if I did not come up with something for you.
