Last year I jumped on the pineapple bandwagon for all I was worth and so, encouraged by my recent baking success, I decided to make myself a pineapple shaped cake for my birthday ^____^ I'd never made a pineapple upside down cake before, so I wanted to give that a go too!



I used pineapple pieces rather than rings so that I could make the cake have a pattern that kinda looked like the outside skin of a pineapple. I baked it in a rectangle tray because I couldn't find an oval cake tin anywhere, but I like how it looks anyway! I also made a circle shaped vanilla cake to make the leaves of the pineapple. I replaced the water in the recipe with pineapple juice and it had a very delicate pineapple flavour which was nice ^____^ I cut it into a leafy shape and then iced it with green icing; I only did the top so that it would match in better with the upside down cake, which has nothing on it's edges. It was really, really tasty and we had heaps left over so all visitors got given cake for the next week ~____^

Thanks rockingbearranch and dulcet! I was a bit surprised I didn't have more pineapple stuff, actually! I'm just a teeny bit obsessed with this particular fruit ... just gotta keep crafting more, I guess! ~____^
