Hi all,

My son just turned 1.  he's going through the 'i dont' want it' phase even for stuff he used to love.  I'm a vegetarian and he is too but he has a milk allergy.  So I'm raising him vegan.

I'm an amateur cook at best (but rock at baking!) and could really use some advice on meals for him.  I need to get some beans, nut butters (little nervous about the possibility of a reaction), grains, etc. in his diet daily.  Now he still relies on soy formula (since he won't eat right) and a few staples like cereal.

I would love to hear your recommendations for toddler meals!

You have my sympathy. It's hard feeding a picky eater. Even harder when that picky eater has food allergies. There are always the staples like Peanut butter and bananas, spaghetti made with fun pasta shapes, and smoothies made with soy milk, or whatever milk alternative you use (strawberry/banana, chocolate/PB/Banana, mixed berry, blueberry/banana, etc.) No guarantee your little one will eat these, but here are some of my favorites...

Oh Mega Carrot Cake Breakfast Cookies. My personal favorite. These are super healthy and delicious. I make a bunch and freeze them so I can grab one on the go. Set one out to defrost or pop in the microwave for a few seconds.
I make muffins and freeze them. that way I can grab one in the morning when I'm in a hurry. Just set one out for a while, or pop in the microwave for 15 sec.

Vegan pancakes. You can make little silver dollar size. Serve topped with fruit, maple syrup, nut butter, or powdered sugar.

Avocado Breakfast Pudding. I substituted chocolate coconut milk in mine to make a chocolate pudding. I also added a little banana because we love banana at my house.

No bake coconut balls. yummy! The whole family loved these.

I also liked the website she suggested...

Homemade Baby snacks. I haven't tried this yet either, but I intend to.

Caribbean style rice and beans This is one of my favorite dinners. It is soo good. I don't know what's better; smelling it cook, or eating it! You can find a bunch of great recipes on Whole Foods website.

I hope this helps. Hopefully he will outgrow this picky phase. You can always try roasting your veggies instead of steaming/boiling them. roasted veggies do taste so much better. A juicer is good too. Then he can drink his veggies, just be sure to mix them with fruit. Good Luck!

My daughter loves cut up avocado.

She also loves soup or chili filled with lentils and beans.

Or butternut squash and chic pea curry.

Sometimes you get to change the world, and other times the world changes you.

The only PhD I earned stands for Pretty Happy Dropout! Now starting new adventures!

Thanks so much for the suggestions.  Defintely going to try some of those reciipes.  escpecially the vegan pancakes!!

Could be he's just bored to death with the same-old same-old food, or it could be a power play and he's just learned you will do his bidding if he puts up a fuss.

You can also, with new foods, feed them to him early in the day when he's rarin' to go and less stressed out about new things, and eat a little of the same food so he can see the new foods are OK. Sometimes it's as much the "how" as the "what".

Hi all,

Welcome to motherhood. Smiley Our two year old was a fantastic eater until about 18 months and then game over. Right now he is refusing to eat anything green and peas and green beans used to be his favorite.

For my son, he will eat nearly anything in popsicle form, so I've gone back to purees mixing fruits and veggies and then I freeze them for "dessert" or snack.  Mini muffins was another phase he went through where he'd pretty much eat it if it was in mini muffin form. This included some savory ones like spinach and meatloaf (I'm guessing there are vegan recipes for mock meatloaf).

I've gotten a lot of good recipes off Weelicious. There is a banana quinoa I've been eyeing this week for breakfast.

And there is a Hail Merry macaroon knock off recipe floating around out there that J loves.

Your kid-o is probably a bit young for nuts but when J got older, we started doing nuts and fruit (or dried fruit) for snacks.  We didn't do PB til two but we did sunflower seed butter with crackers at that age too. Hope that helps some.

For my 2 year old:

I juice greens, carrots and apples. I then blend with banana and frozen berries for a veggie/fruit smoothie. Because juicing can take a long time, I make a huge batch and freeze in individual servings. I take them out of the freezer the night before so that they will be ready to drink in the morning. He LOVES them.
