I've got a few pairs of work pants that are too big pretty much everywhere, but especially in the butt (like most of my pants)
Does anyone have any tips that might help me take them in to minimise the baggy, pooped in my pants look I get at the moment?

Buying pants that fit properly isn't an option because they don't exist. :/

I never have this problem, I usually have to buy too big to accommodate my ghetto booty, and take up the waist. 

I'd put them on inside out and (if you have someone) help you pin up the back seam until it is closer to what you want, measure and mark the curve, sew, and then topstitch/finish however the style of your pants requires.

Like I said, I've never had to do that, and hopefully someone with experience will be able to give you more specifics!

Glitter_bang, I giggled at your pooped in my pants description. I usually make pants/skirts based on ample hips and bottom and take in the waist. Perhaps you could carve out some of the extra material in the back crotch seam?
