In october we have plenty of birthdays in our class, and also we have veganism and lactose intolerance. so I decided to tackle backing, as I know cooking very well, but baking is freaking me out. After a few tries I made up my own recipe:
I present to you the autumny vegan mini plum cakes...


for the dough:

500 g flour
250 g vegetable margarine
180 g brown sugar
3 tbs water ( I used the plums juice)
1 pkg backing powder
1 pkg vanilla sugar (if you live in germany)
1 dash of salt
I also put some spices like anis and cinnamon

for the filling:

500 g canned (or fresh) plums
6- 10 peices dried ginger (depends on gust)
2 tsp flour


1. heat up your margarine, in the mean time put togehter all the ingridients for the dough
2. put in the molten margarine and mix it up until there is no more flour
3. put it in the fridge for 25 minutes
4. cut your plums and the ginger in smaller pieces and mix it up with the flour
5. now put some papercup in your sheet and mold the dough like shown in the picture
6. now you can fill in your plumsy mass and on the top put some crumbs
7. now you can bake them for aproximately 30 minutes


that was easy peasy!

I just used normal flour, because that was what I had on hand. But I think a whole grain flour (?) would also be good.
