Thank you all so much!  I'm a little over a week in and so far, so good.  I'm experimenting with tofu, and I already love beans and lentils, so I'm going to look for more recipes with both!

Nice, Kaz!! Glad you're feeling well so far!

One tip for tofu, press the heck out of it before cooking it. I put it in a tea towel and then pile a bunch of cookbooks on top of it Smiley. I liked the texture a lot better when I started doing that.

I made this tofu recipe a week ago or so and it was really yummy!

Yeah, Mare!!! How did those burgers hold together? I tried a different vegan burger recipe and it didn't seem to hold together as well as versions I've made with an egg.

We're having leftover enchiladas for dinner tonight. I use this recipe but add corn and an extra half can of beans.

Mmmm it might be those enchiladas tomorrow! The burgers held together really well when I formed them and baked them, but when I reheated one in the microwave today for lunch it was super crumbly.

Yeah, that's happened to me too. It's hard to find the right balance of dry stuff, wet stuff and sticky stuff in veggie burgers.

I've been a vegetarian for many years now...I originally started when I was 17 (which was about 14 years ago), and I've gone back an forth a few times...but I've managed to stick to it for the last few years. I've had a few brief stints with veganism, but I do consume dairy these days.  The majority of the dairy I drink is either raw milk from a nice organic farm in northern California (they actually keep their baby cows and don't sell them for veal), or I get the milk from a local Hare Krishna farm...those cows are very loved there!  I don't eat eggs because I think they are just gross.  I've never liked them, so it was pretty easy to do without them.

My best advice to you is to do tons of research!  There are a lot of great recipe sites on the 'net.  I really love the PPK (post punk kitchen).  Isa Moskowitz is a culinary genius.  Vegweb is pretty great too, as well as veggieboards. 

Keeping a balanced diet is vital.  You will be tempted to eat lots of bread, grains, and fatty stuff like cheese.  Despite being on a vegetarian diet for nearly 14 years, I haven't had a single nutrient deficiency.  The belief that vegetarian diets are low in protein is false!  Foods like red lentils actually have MORE protein than meat does.  You can pretty much get all of the nutrients you need from a plant-based diet.  Smiley
