I am still on a small batch baking quest as a result I have been looking for small baking pans that will fit inside my toaster oven- Much to my surprise I had the perfect mini cupcake pan lurking in my cupboard- after such as wonderful find I realized I needed the perfect recipe- so after a couple of tries I came up with these:

Marvelous Mini Blueberry muffins


6 Tablespoons all purpose flour
3 Tablespoons Granulated sugar
1/2 teaspoon baking powder
pinch of salt
1 Tablespoon vegetable oil
2 Tablespoon milk
1 egg
1/4-1/2 c blueberries
1 teaspoon flour

Streusel Topping:

2 teaspoon granulated sugar
2 Tablespoon all purpose flour
1/4 teaspoon cinnamon
1 1/2 teaspoon butter

For the batter:
1. Combine first four ingredients in a bowl
2. in a separate small bowl combine oil, egg and  milk mix well.
3. add egg mixture to dry ingredients mix only enough to make a batter (too much mixing makes tough muffins)
4. toss blueberries and 1 teaspoon of flour fold into batter.
5. finish muffins by topping with struesel or granulated sugar sprinkled on top
6. Bake 400 15-20 mins

for the streusel topping:
1.combine sugar flour and cinnamon
2. using a pastry knife or two forks cut in butter until it resembles crumbs
3. sprinkle on top of unbaked batter

This batter makes twelve mini muffins exactly- it would make three to four regular muffins or two large muffins depending on how full you fill your pan and how large your pans are-

I have a set of regular size silicone cupcake liners I plan to use to see what the actual yield is the next time I make these
