So my friends and I had a Royal Wedding Viewing party this evening in celebration of Kate and Will's Wedding and I was in charge of the cupcakes! They're red velvet cupcakes (dyed blue instead of red to make them royal) filled with chocolate fudge and topped with cream cheese frosting. Everything was made from scratch and they were amazing! The cake and frosting recipe were from America's Test Kitchen Family baking book, and the fudge recipe was from this blog that I can't find right now and I'm too tired to keep looking for. I'll post a link when I find the blog again. http://theflourishingfoodie.wordpress.com/ the only modification I did was i only used a third fo the chocolate the recipe calls for and 3 Tbsp of flour instead of 2.

Oh and the decorations are made from marshmallow fondant. Onto the pictures!

It was my first time using a piping bag to put the frosting on instead of just using a knife and I have to say I loved the way it looked. Well that's all let me know what you think.

So clever to make blue velvet!  I bet they were a big hit!

I tried using a piping bag for the first time on my last batch of cupcakes, too and loved the way it looked and how fast it was.

Thanks everyone! And jennythor, since the fondant is basically just marshmallow and powdered sugar it is very sweet and it certainly doesn't taste horrible (unlike other fondants I've had) but I definitely didn't like it better than regular frosting. Still I think I'll only ever use it for small accent decorations.
