YUM is all I can say...I decided to start a new foodie blog and to celebrate I made macarons first time ever. Not to be confused with coconut macaroons

I present to you... Lemon Macarons with Lemon Swiss Buttercream filling

this is a good try, i find that the most risky part of these is the adding of the icing sugar...so whisk egg to soft to stiff peaks, add the caster sugar and whisk it again till almost upside down bowl stage, then, carefully add the icing sugar and then even more carefully add the almonds...trying not to beat all of the air out, then you'll get nice, puffy macaroons to die for...though, saying that, I have made about 6 batches and only about 3 of them have been actually amazing, the others were like pancakes...and i think it was the adding of the icing sugar that did it... was weird, and a challenge... I curse them as they taste darn good, bet these did!! Grin

They were so yum. I made a batch using a different recipe the other day, and they worked perfect! I think I was more aware of what I was doing wrong this time.
I'm the only one in the house that likes them (how I do not know), so I have a heap of the shells in the freezer for when I feel like them... I really want to make a macaron tower haha!

I think this time it was the fact I had done more research on them. I think in this first batch I had over mixed the batter, this time around I was a lot more careful with what I was doing, and made sure I followed the instructions perfectly.

Um, they made my mouth water!

They were so good, the lemon flavour was amazing
