My dear friend Penny just turned thirty. I make an Irish Coffee Chocolate cake (a Betty Crocker recipe, I believe) she just loves, so, I wanted to make her one for her party.

At the last minute, she moved the party from Saturday to Friday... which meant I had to make the cake in the two and a half hours I had between the end of my work day and the party. Gah!

So many little things went wrong (the cake didn't come out of the pan cleanly, the recipe I always use somehow didn't produce quite enough frosting this time, I forgot to dissolve the coffee into the whiskey, which is why you can see bit of coffee in the frosting, instead of poking the tip of the gel frosting with a pin, I snipped off the top and that meant it came out too thick for my liking and I didn't have enough for the letters/date... I improvised by using a toothpick to scrape off excess from the beard and wrote the text with that) but, I am proud of how it turned out... albeit imperfect.

It was delish!

i saw the preview and wondered what the occasion was.  i think the cake looks great. what a lucky birthday girl.  love that you add the year.
