I come from a former socialistic country(Slovenia, which was a part of former Yugoslavia). When I was a child we didn't have a lot of tropical fruits in stores and it's still pretty fascinating when you find passion fruit in a super market. Even the boy who weights the fruit didn't know what the strange looking round stuff in the bag I brought him was:) So i bought a half kg(i think that's around a pound) of the fruits, which was crazy expensive (5 , which is around 6$) and had no clue what I was going to make with it. Another surprise in the store was finding a big bucket of cream cheese. It's also a product not found often. If I make a cheese cake I usually buy ricotta cheese(we have a lot of that:)), which is similar but not the same. So I bought the bucket (1 kg) and also bought 1 mango fruit and decided to make a tropical cheesecake. I didn't have a recipe so I just went with the flow, but the result was pretty awesome so I decided I'm going to share it with you:)

First some pictures of the proces and the cake:

You will need:(I'm sorry that the measurements are in the metric system, but that's the one we use)
500 g of passion fruits
1 ripe mango fruit
600 g of cream cheese
2 limes
1 orange
sugar as need

For the crust
Butter cookies
25g butter

Preheat the oven to 180C
Grind the cookies(i think i used 20, I have no clue how much it was in g) to get crumbs, mix them with the butter and make a thin layer of the dough  in a cake pan (lined with backing parchment). Place in oven for 10 minutes.
Peel the mango and cut it in small pieces. Take 1 (if it's big) or 2(if they are small) passion fruits and put their insides in the bowl with the mango. Grind to make a puree. Add the juice of 1 lime. Mix the cream cheese and the fruit puree and add as much sugar as you like (I put in 3 table spoons and it was almost not sweet enough. but that's the way I like it). Use the gelatin as recommended by the manufacturer ( I had a thing called gelatin fix which is awesome- you just mix it with the batter and put it a fridge for 3 hours and the dessert is ready.) Pour on the the crust and set aside for an hour.

Peel? (I have no idea which expression is used in connection with passion fruits) the rest of the passion fruits, add the juice of 1 lime and 1 orange, sugar if necessary and again use gelatin as recommended by the manufacturer. Pour it on the cake.

Put it in the fridge for some hours, it's probably the best if you let it rest during the night:). Enjoy!

It looks pretty too! Mind, I think the insides of passionfruit look gross, but your cheesecake is beautiful!
