Wintertime makes me want to eat soup. I made a curry split pea stew the other night, but I have two other soup type of things up on my site that I thought I'd share. Tomorrow I'm going to make another kind, so if it turns out well, I'll post it. Meh.. making myself hungry now even though I am so tired. ;-; Anyway, wtf I blabble.
Spicy Vegetable Bean Chili
http://calmmindbusybody.com/vegetable-chili-recipe/Ingredients* 2 Cups Black Beans (Or any kind of beans you like: Kidney beans, navy beans…)
* 1 Cup Cooked Barley
* 3-4 Garlic Cloves, Chopped
* 1 tbs Extra Virgin Olive Oil
* 1 15-19 ounce can of tomatoes
* 1 5 ounce can of Tomato Paste
* 1 tsp Cumin, 1/2 tsp Curry Powder, 1 tsp Chili Powder
* Cayenne Pepper and Ground Pepper to Taste
* 1 1/2-2 tbs Cocoa Powder (Adds natural anti-oxidants and enriches the flavour of your chili with a roasted flavor)
* 1 Cup Vegetable Stock (Or add 1/2 a vegetable stock cube into 1 cup of boiling water)
* 4-5 Stalks of Kale, separated from the stem and ripped into small pieces
* 1 cup of Snow Peas, cut into bite-sized Pieces
* 1 Green Pepper, chopped
* 1/2-3/4 cup of hydrated TVP
* 1/2 Block Firm Tofu, squeezed of excess water and cut into small cubes
You don't have to add the TVP if you don't have any...I rarely find that I use mine anyway.
Spicy Lentil Soup
(This soup tastes a lot better than it looks in the photo...serz...so good)

* 1 green onion, chopped / half white onion, chopped
* 2 chopped celery stalks
* 1-2 carrots, sliced with peeler
* 2 potatoes, diced
* 1 1/4 cup dried lentils (I often use half lentils, half barley)
* 5 cups water / stock (I use veggie stock cubes added into water)
* 2-3 garlic cloves, minced
* 1/2 tsp curry powder, 1/2 tsp cumin
* 1/2 tsp red pepper flakes, 1/2 tsp ground pepper
* 2-3 chopped fresh tomatoes / canned whole tomatoes
* 2 cups spinach, finely chopped / kale
* 1 tbs lemon juice
Mm soup. I was too exhausted to make soup for everyone tonight, so we had some canned Butternut Squash Soup, which was tasty, but it had 27% sodium per 250ml...ugh. Wish they wouldn't load up soups with sodium.
